One area I was not in charge of for this circus is the concessions, and the one in charge totally bungled it. 

hEt can attest how much I worry about making sure we have enough at the party, going well overboard each october.  (ironically, numbers wise, it probably matches up with the circus today pretty well) 

You sure as hell don't hire caterers for X people when there are Y people, and hope Z people don't show up.  You order Y + 10% because caterers and portion size aren't always realistic.
